Have I mentioned before that I REALLY like cheese? It really is one of the greatest foods ever made… at least in my opinion. And it’s also better melted. Could be why I love macaroni and cheese, grilled cheese, and cheesy potatoes. If I was lactose intolerant, I would probably be the saddest person alive. This casserole is no exception. It is full of cheesy goodness. Naturally, this casserole is one of my favorites. Like the chicken noodle casserole, this will warm your belly. The great thing is that my husband shares my love of cheese, and all things with it.
Cheeseburger casserole was another dish that my mom would make us when I was younger. It’s made with ground beef, noodles, and diced tomatoes in a creamy cheese sauce sauce that is baked until bubbly and melty, making it a wonderful comfort food.
The recipe starts by browning ground beef in a pan, and once the meat is browned, add some diced onion and cook until the onion is tender and clear. Once the meat and onion mixture is done, drain the grease off the meat and set it aside. While the meat is cooking, boil some water, and add some egg noodles, and cook until tender. Once the noodles are done, drain those as well. In a medium bowl mix together a can of fiesta nacho cheese soup, some sour cream, and a can of diced tomatoes that have been drained. Once those are combined, add in the ground beef and noodles and stir to combine. Place the beef and noodle mixture in a 9×13 baking pan, and top with shredded cheddar cheese. Place in an oven that’s been preheated to 350 degrees.
- 1 lb. Ground Beef
- 1 medium Onion, diced
- 12 oz. Egg Noodles
- 1-15 oz. can Diced Tomatoes
- 8 oz. Sour Cream
- 1 can Campbell’s Fiesta Nacho Cheese Soup
- 1 cup Shredded Cheddar Cheese
Preheat oven to 350°. Brown ground beef in a skillet. Once meat is browned, add diced onion and cook until translucent and tender. Drain beef grease from beef and onion mixture. While meat is cooking, boil water in a pot, and cook noodles according to the package directions. Once those are cooked drain and set aside. In a medium bowl mix together the diced tomatoes, sour cream, and cheese soup. Then add beef mixture and noodles and stir until combined. Pour into a 9×13 pan, and sprinkle with shredded cheese. Place in oven and bake for 15 minutes until bubbly and the cheese is melted.
