Spicy Sloppy Joes

This has been a busy week. We have had so much going on, and sometimes that can cause dinner to be an after thought. One of the things that I learned from my mother-in-law was to always keep something in the fridge or freezer that you can pop out and warm up for a nice meal. Since I knew we wouldn’t get home last night until after 9, I made these sloppy joes the night before so we could heat them up and not have to spend money at restaurant. This recipe is also something that my mom gave me. It has a little kick from Sriracha sauce and goes well with a piece of Colby cheese on top (enter cheese obsession).

To make this recipe, start by chopping some bell pepper and onion. Add a little oil to a pan and heat to medium. Add peppers and onions to skillet and sauté for a few minutes. Then add the ground beef to skillet and cook until completely browned. Once beef is done, drain the beef and onion mixture. Return to pan andadd ketchup, sriracha sauce, mustard, some pepper, and whichever spices you like. I used some Italian spices. Let this simmer for about 20-30 minutes. Once all the flavors have mingled, you can save for a busy day, or serve with your favorite sloppy joe accompaniment.

Spicy Sloppy Joes

  • 1 ½ lbs. ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 c. ketchup
  • 1 can diced tomatoes
  • 1 tbsp. sriracha sauce
  • 1 tsp. mustard
  • Pepper, to taste
  • Italian spice, to taste
  • Hamburger buns

In a large pan, sauté bell pepper and onion in a little olive oil over medium heat. After about 3 minutes, add ground beef and cook until completely browned. Drain beef mixture, and return to pan. Add ketchup, diced tomatoes, sriracha, mustard, ground pepper, and Italian spices and stir. Simmer for about 20-30 minutes, stirring occasionally. Serve in hamburger buns.

PS: If you have any left over sloppy joe, I suggest making a Grilled Cheese Sloppy Joe, or Sloppy Cheese, or a Grilled Joe (which doesn’t sound too good). Basically it’s a grilled cheese with sloppy Joe in the middle, and it was so good! Just butter a piece of bread, place it on a hot skillet and fill it with some hot sloppy Joe, and then 2 pieces of your favorite cheese. I used Colby jack, and then top with another piece of buttered bread. Flip it once the first side is a nice golden brown, and cook the other side until golden brown as well. It’s amazing!
