Taco Delight

Tacos are one of my husband’s favorite foods. Even so much that he asked for them for his birthday dinner. Whenever I ask him what he would like for dinner, he always says tacos. The most I have seen him eat in one sitting is 6, and that doesn’t include the rice and dessert he had afterwards. Needless to say he was pretty excited when I introduced taco delight to him. It’s all your favorite taco fixings in one dish, including ground beef, rice, diced tomatoes, cheese, salsa, among other delicious ingredients. We usually eat with tortilla chips. This is a great weeknight meal as it’s quick and easy and can feed a good number of people. You could also take this to a party as great appetizer.

To start the taco delight, brown some ground beef in a skillet, then add some diced onion and bell pepper. Once the onion and pepper are tender, drain the beef and onion mixture, then return back to pan. Add cumin, chili powder, diced tomatoes and salsa and stir around, then add in minute rice. Turn off the heat and cover, letting it stand for 5 minutes. Remove lid and make sure rice is tender. Serve immediately with your favorite taco toppings like, shredded cheese, lettuce, sour cream, etc., and serve with tortilla chips.

Taco Delight

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped (any color)
  • 15 oz can diced tomatoes
  • 1 cup salsa
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 3/4 c. minute rice

Toppings:

  • cheese
  • lettuce
  • sour cream
  • tomato
  • guacamole
  • tortilla chips

Directions:

Brown ground beef and onions and bell pepper. Drain beef mixture and place back in pan. Add diced tomatoes, salsa, and spices. Bring to a boil. Stir in rice. Turn off heat, cover and let stand for minutes. Serve with desired toppings and tortilla chips.
