Country Club Chicken

Making a nice Sunday night dinner is one of my favorite meals to create. Sitting down on Sunday night with my family brings back fond memories. When I was younger, I remember going to my grandparents house for dinner on Sunday, and loved being with my family and sitting down to a  home-cooked meal. Naturally, it is something I have loved ever since. Now I like to do that with my husband and his family, especially since mine lives so far away. It’s always so fun when my family is visiting, and we get to gather with everyone.

This Sunday I made a meal called country club chicken that I found on Pinterest by Kayotic Kitchen. It’s a great meal for the whole family, and not too complicated. I served it with some green beans, and chocolate cherry cake, my husband’s favorite. It was a great meal with great people, and I got to hang out with my sister-in-law and friends as we watched the new episode of Once Upon A Time…. a perfect way to end a weekend.

To start the country club chicken, cook some bacon strips in a skillet. When the bacon is thoroughly cooked, set aside on a plate and break into bite size pieces. Add some chicken breasts to the skillet that still has the bacon grease in it, and sprinkle with some salt and pepper. You don’t need much salt as the bacon will give you a good salty flavor. Cook the chicken breasts on each side for about 4-5 minutes until cooked through, and set those aside, too. Add some diced onion and sliced mushrooms to the pan and cook those until tender. Once those are done cooking, add some white wine to pan and deglaze it, scraping all the good flavor off the bottom of the pan. Next add a can of cream of mushroom soup and the bacon pieces, and bring to a slight boil. Reduce heat and add cheese (ah, cheese!), stirring until melted in. Place chicken breasts in a baking dish, and pour sauce over top. Bake in a 350° oven for about 20 minutes, or until bubbly. Meanwhile, cook some linguine pasta according to package directions. Serve the country club chicken over pasta, and enjoy!

Country Club Chicken

Ingredients:

1 pound linguine pasta
4 chicken breasts
1 large onion, diced
7 oz mushrooms, sliced
1 can concentrated cream of mushroom soup
5 slices bacon
1/4 cup dry white wine
2/3 cup white cheddar
butter or oil
salt & pepper

Directions:

Cook bacon in a skillet until cooked through. Set aside. Sprinkle chicken breasts with salt and pepper and place in skillet and cook in the bacon grease on each side for about 5 minutes, or until golden brown. Set chicken breasts aside, and put onions and mushrooms in skillet, cook until tender. Add in white wine, and deglaze pan. Then add cream of mushroom soup to pan and stir to combine. Cut bacon into small pieces and add to skillet, then add cheese. Once sauce is hot and bubbly, add chicken to a baking pan and pour sauce over top. Then put in oven and bake at 350 for about 20 minutes. Meanwhile cook linguine according to package directions. Serve country chicken over pasta.
