Today I have a really great, and easy pork recipe for you! It takes very little time, and its all done in one pan so clean up is a breeze. This recipe is one that was introduced to us by my Aunt Karen, and has been a favorite of mine ever since. Its full of fall flavor from the cinnamon, apple juice, and dried cranberries. The pork in seasoned with cinnamon and sautéed in a skillet with oil. The wild rice is then cooked in the same pan with onion, apple juice and dried cranberries. When everything has been cooked, you add a little cheese to the top and allow that melt. It’s weird I know, even I thought it was weird when I first tried this. But it really brings the whole dish together. I promise it’s worth it!
To begin this dish, trim the pork tenderloin, and cut into ¼ inch think slices. Sprinkle both sides of pork with cinnamon. In a large skillet with sides, sauté pork in olive oil over medium heat. Cook on each side for about 4-5 minutes, until pork is cooked through. It doesn’t take very long.
Once pork is done, remove it from the pan, and set aside on a plate. In the same skillet, sauté some diced onion. Once onion is tender and translucent, pour in apple juice, rice, and seasoning packet. Bring mixture to a boil, then add the dried cranberries. Turn heat off and cover pan. Let it stand for 7 minutes. Once rice is tender, add the cheese to the mixture an combine. Put pork back in skillet, and sprinkle with remaining cheese. Cover skillet and cook over medium heat for about 3 minutes, or until cheese is melted. Enjoy!
Pork with Wild Rice & Cranberries
- 1 lb. boneless pork loin, sliced 1/4″ thick
- 1 tsp. cinnamon
- 1 tbsp. oil
- 1 medium onion, chopped
- 2 cups apple juice
- 1 pkg. quick cooking long grain and wild rice
- 1/2 cup dried cranberries
- 1 1/2 cup shredded cheddar cheese
Season meat with cinnamon. Sauté meat in skillet over medium heat, about 5 minutes per side. Remove from skillet. Add onion, cook until tender. Add apple juice and rice seasoning packet, bring to a boil. Stir in rice and cranberries. Cover, remove from heat. Let stand 7 minutes. Stir in one cup cheese. Arrange meat over rice. Sprinkle remaining cheese over rice. Cover until cheese is melted.
